Having had extensive training as an Ayurvedic chef under both Hale Pule, in Kauai and Dr Adjit, Australasia’s most experienced Ayurvedic doctor, Nettie focuses her meal plans on maximising the healing benefits of each dish to aid in enhanced digestion, reduced inflammation, increased energy, increased vitality and happiness.
Retreat & Function Catering
Omsai Ayurveda caters for all kinds of retreats and works with you to build specific menus based on your individual retreat requirements, philosophy and budget.
Nettie has experience in retreat catering for large numbers and for a variety of specialised dietary requirements. She specialised in holistic, integrative nutrition, using locally sourced produce and seasonal ingredients.
Nettie plans her meals around the Ayurvedic Principles, with the largest meal being served in the middle of the day when the bodies digestion is strongest as the sun is at it's highest point in the sky.
At night she prepares a light meal designed to warm and nourish the body, such as bowl food that is cooked to be more gentle on the digestive system. This prepares you for the sleep cycle allowing your body to regenerate more efficiently overnight.
In the morning, meals are designed to break the fast and stimulate the digestive system ready for the day with a light meal such as nourishing porridge and fruit compote with toasted seeds, nuts and medicinal digestive spices such as cinnamon, cardamom, ginger and vanilla, or turmeric, coriander, cumin and fennel for light savoury dishes. Think of it as the kindling that lights the fire.
